Farm Winery
You've never had fruit wine like this before! Made from high-quality fruit grown at Staehly Farms, these fruit wines eschew the traditional over-sweet and syrupy consistency of the fruit wines of old in pursuit of a light, fruit-forward, and grape-wine-focused method of crafting.
Our rich portfolio of wines runs a range from bone-dry with our Dry Apple Wine clocking in at 0.5% residual sugar, all the way up to just-sweet-enough with our Rhubarb Wine at 8.0% residual. Some of the wines are fruit-specific, meaning that they are made with only the named fruit. For example our Rhubarb Wine is made from 100% rhubarb and nothing else. Others, like our Blueberry Breeze, are a blend of different fruit such as blueberries and apples. None of our wines contain flavorings or extracts.

Our Dry Apple Wine is the driest possible, with sugar levels below what the human tongue can naturally detect. Such a low sugar content enhances both the acidity and the fruitiness of the wine, also making it reminiscent of a Pinot Grigio. This wine is best suited for the seasoned wine drinker because of its dry characterisitics, but we encourage everyone who visits to give it a taste.
We've found that this wine pairs well with pork dishes, as well as with smoother cheeses such as Beaver Brook Farm's Pleasant Cow. The flavor of the pork tends to increase the notes of apple in the wine.

The second of our apple wines is the Semi-Sweet (also referred to as off-dry). This wine maintains the fruitiness of the Dry Apple, but the subtle sweetness takes the edge off of the acidity. This is the most widely enjoyable of our wines, with most wine lovers preferring the well-balanced sweetness and tartness of the wine. The snappy characteristics combine with its fruitiness to make it most reminiscent of a steel Chardonnay.

The sweetest of the three apple wines, our Sweet Apple is easily palatable for first-time wine drinkers and for those who prefer a little bit of sweetness. The sugar helps to tone down the acidity of the wine, as well as the alcohol. The wine is not so sweet as to be considered a dessert wine, however. More on level with a Pinot Grigio than a Riesling, this wine is “just sweet enough” without being cloying.
We've found that this wine pairs well with chicken dishes, and with most cream-sauce pasta dishes. The sweetness of the wine helps to complement the flavors of the sauces. The Sweet could be easily enjoyed with a brie or a cheddar cheese.
Our first 'red' wine, Midnight Blueberry is a remarkable semi-sweet wine with rich flavors and bold complexity. Notes of blueberry are to be expected, but light notes of vanilla as well as blackberry with a peppery finish make this wine similar to a Malbec.
We've found that this wine pairs well with fattier and protein-rich foods. Try this wine with a lamb dish or with a rich pasta sauce. The sweetness of the wine also makes it a pleasant dessert wine, and also makes for easy sipping.

Bella! A recipe from the Old World, our Pomodoro is the first tomato wine commercially available in the United States. Passed down through the years, this wine recipe has been given a new life by Staehly Farm Winery. Delightfully citrus-like, this wine is characterized by its notes of grapefruit and a crisp snap. Notes of apricot give way to a light tomato finish.

The sweet and tart flavor of old-world cherries is the star of this hand-crafted rose`. With only a few trees in the orchard, this Cherry Wine is done in very small batches, with only a few dozen cases produced for 2016. In keeping with our other fruit wines, this is a lightly-sweet wine. Just a touch more sweetness than Midnight Blueberry gives it a very "cherry pie" flavor without the sweetness being overpowering.

A light, characteristically rhubarb flavor with a light floral note that makes this a pleasant sipping wine. Sweeter than our other wines, the tartness of the rhubarb compliments the increased sweetness in a delightful way that makes for easy drinking. Just about as sweet as a Riesling, this wine is the sweetest we produce. Enjoy chilled.
This wine pairs well with chocolate or creamy cheeses, as well as buttery dishes. Although it is better suited for an after-dinner wine, it also pairs well with salmon and chicken, as well as spicy foods.

The flavors of summer come alive in this delicious wine. Made with a blend of yellow-flesh and white-flesh peaches, this wine is perfect for dinner or dessert. An easy drinker, this wine has notes of peach but also of honey and clover - It is very fruit-forward. It is best served chilled but can also be served at room temperature.
Our Peach Wine pairs very well with chicken, but also with seafood (crab cakes, for instance) or smoky cheeses such as provolone or gruyere. A perfect addition to a summer picnic.
We've taken our Midnight Blueberry wine and blended it with Sweet Apple to increase the residual sugar and make a delicious summer wine. This wine is very easy drinking and great with a slight chill on those hot summer days. This blueberry wine is "light" enough to be considered a blush, and with its subtle sweetness pairs well with chicken and pork. A light fish also pairs excellently, as well as smooth and creamy goat cheese.

A semi-sweet wine done in a distinct American style, this blend of three different Connecticut plums makes a beautiful rose' suitable for the heat of summer or the cold of winter. Try it at room temperature or chilled and discover a range of flavors. Notes of plum give way to a slight nutty flavor on the finish. Deep complexity while remaining light and drinkable.
Best for dessert and light sipping, this wine also has its place in pairing with Asian cuisines due to its roots. Duck is also highly suitable, with turkey an apt substitute.
A cinnamon-infused spin on our popular Semi-Sweet Apple wine. Light spicing brings out all the best flavors of fall. Like nothing else in the state, this wine has only subtle hints of baking spices that layer with notes of McIntosh, Honey Crisp, and Delicious apples. Try this wine chilled or serve warmed for a drink that will really warm you up.
Perfect for pairing with meals, this is an ideal wine for dinner or dessert. Turkey, chicken, or pork will all compliment this wine and bring out slightly different characteristics. Bring a bottle along for Thanksgiving or Christmas dinner.

The red wine complement to our Spiced Apple Wine. A delectable blend of local Connecticut Black Currants and our Spiced Apple Wine. The light spicing brings out the tartness of the currents that then layer with notes of apple. Mild tannins make this a medium-bodied wine with a subtle sweetness.
This wine is quickly becoming one of our best sellers because of its versatility in pairings. Turkey or chicken, duck, beef, and even pork all go well with this semi-sweet wine. Aged cheeses are perfect for pairing as well, with the creamy textures of the cheese offsetting the tannins.
